Dear Riley,
You love my taco soup. The recipe came from Grandmom but I want to make sure and share it with you. When I was growing up Grandmom always made this soup for us during Fall and Winter. Aunt Ma and I always loved it too. Grandmom would serve it with cheese and saltine crackers in her white bowls. She always made plenty for us to have as left-overs. I've changed a few things to her original recipe, but it's still pretty close to what she made.
Taco Soup
1 pkg taco seasoning
1 pkg Ranch dressing seasoning
2 lbs ground beef
2-3 cans corn or hominy
2 cans of Ranch -style beans
1 can of black beans
1 can Original Rotel
1 can Mild Rotel
1 small can of diced green chiles
Brown the beef. Add the taco seasoning, following the directions on the package. I throw all of this into a crockpot and cook on low for 8 hours or high for 4 hours.
Serve with cheese, sour cream, and tortilla chips.
